The gravy is really easy to make and you can easily make a gluten-free pot roast by using a gluten-free flour * or “clean” by using whole wheat flour, spelt flour * or einkorn flour *.to make this paleo, just use turnips instead of white potatoes and tapioca flour * or arrowroot starch * for the gravy.. Slow cooker pot roast is a favorite winter comfort food, with lots of tender beef, carrots, onions, garlic, celery, herbs, and gravy. gluten free, paleo, and whole30.. Place in slow cooker and put sliced carrots, parsnips and onion around the roast. top the roast with garlic cloves, a bit more salt, thyme and thyme sprigs and black pepper. put the bay leaves in the pot then pour in the beef broth and red wine. cover and let cook for 8 hours on low..
Place the onions in the bottom of a slow cooker (this is my favorite one). place the roast on top of the onions and season with salt and pepper. place the potatoes on top and around the roast. cook on low for 8 hours.. Place the roast in the slow cooker. sprinkle the crumbled bacon over top the roast. add the minced garlic to the top of the roast. pour the beef stock over top the roast.. Immediately sear all sides of the roast and set aside. wash and prepare vegetables. put roast in crock pot, add vegetables, bay leaf and water, and cook on high until tender (6-7 hours). or, preheat oven to 325 f, add the vegetables, bay leaf and water to the heavy bottomed oven-proof pan with the meat, cover and roast for 2-3 hours..
